The Flavor of Football: Brazilian Feijoada

BRAZILIAN FEIJOADA RECIPE
INGREDIENTS
1 pound dry black beans
3 Tbsp avocado or olive oil
1 pound beef short ribs (no bone)
2 large onions, sliced
5 cloves garlic, minced
1/2 pound chorizo or Italian spiced sausage
1/2 pound smoked sausage, such as linguica or kielbasa, sliced into rounds
1/2 pound thick sliced bacon, cut into small pieces
4 bay leaves
Water
1/2 teaspoon black pepper
Salt to taste
Orange, washed and cut into slices
INSTRUCTIONS
Soak the beans in a large bowl of water overnight.
Chop the beef short rib into slices and in a large Dutch oven or heavy duty pot, heat the oil over medium-high heat and brown the beef short rub until generously browned on each side. Remove the beef and set aside. In the same pan, add the bacon and cook until slightly crispy (for the best flavor leave the grease but you can drain some of it if you prefer). Add the onions and cook the onions until soft and translucent, about 5 minutes. Add the garlic and cook for another minute. Add the chorizo sausage and smoked sausage and cook until the crumbled sausage is no longer pink.
Return the braised beef short rib to the pot along with the chorizo, bacon bits, and smoked sausage. Drain, rinse, and add the black beans to the pot. Add the bay leaves and black pepper. Cover the contents of the pot with water until the meat is just barely covered (about 2 quarts). Bring it to a boil, reduce the heat to low, cover and let simmer for 2 hours, making sure the beans are soft.
*If the feijoada is too liquidy, uncover the pot and continue to cook for another 20 minutes or so to allow some of the liquid to evaporate. Add more salt to taste as needed. Add some hot sauce according to your heat preference. Discard the bay leaves.*
Serve with rice, collard greens, Brazilian Farofa and fresh orange slices.

Cultural Context
Feijoada (which comes from the Portuguese feijão, meaning bean) is a cultural cornerstone of Brazilian cuisine and history. Popular amongst every social class, it’s consumed for meals far and wide, though is often consumed as part of festivity and celebration.
Especially for football matches. Feijoada is typically understood as Brazilian soul food, and is meant to be enjoyed slowly, by large groups of people throughout the day. A perfect kickoff, halftime and fulltime snack while watching Neymar and the Brazilian National Team mesmerize with footwork.
The dish’s roots are disputed, with early historians claiming the meal originated from Brazilian slaves gathering the meat and bean scraps of their masters and forming a stew, while more modern understandings describe the dish as being brought to Brazil from Portuguese traders - its popularity escalating due to the ease of preparation as well as the relative affordability of beans.
Whether the meal demonstrates the resourceful nature of centuries-old Brazilian slaves or the open blending of cultures across the Atlantic Ocean, the dish, today, is symbolic of Brazilian heritage and tradition.
